This ended up being really good.

Some kind of dinner.


  • 1.5 beets, peeled and cut in half
  • few stalks of celery
  • few green onions
  • some kale
  • some paneer
  • 1T olive oil
  • 2t sesame oil
  • 1T grated ginger
  • one garlic clove, grated
  • 1T rice vinegar
  • 1T soy sauce
  • sriracha


  1. Wrap the beets in foil and bake at 375F for 30 minutes
  2. While the beets are cooking, cut up the celery, onions, and kale
  3. Dice the paneer
  4. Heat oils in a pan on med-low
  5. Add the grated ginger and garlic
  6. Let cook for 30 seconds or so
  7. Add the paneer, stir
  8. Add the celery and green onion
  9. Increase the heat and cook for a few minutes
  10. While it's cooking, dice the now-cooked beets
  11. Reduce the heat
  12. Add the rice vinegar and soy sauce
  13. Stir in the beets
  14. Add sriracha to taste
  15. Serve over rice
